Macedonian Cuisine recognized as UNESCO’s cultural heritage

As part of the strategic action plan for the promotion of its agri-food products for the years 2018-2020, the Central Macedonia Region will prepare an application file to include the Macedonian Cuisine in UNESCO’s intangible cultural heritage list.

The recipes that comprise the Macedonian cuisine have already been recorded in a register together with a detailed presentation of the ingredients and preparation method and according to the ISO quality system.

The cultural and gastronomic tradition of the Pontians, the Vlachs, the Sarakatsans, the Asia Minorians and the local inhabitants, coexist in this register, while the influence of the Jewish and Armenian communities is evident.

The result of this record reveals a harmonious combination of Byzantine cuisine, oriental inventiveness, aroma, imagination and the local gastronomic tradition of the Macedonians. The principal features of Macedonian Cuisine are the use of sausages, cheese, legumes and vegetables, and each region contributes something to the gourmet map of the region.
