A journey of flavors and aromas by the resort’s Executive Chef, Bertrand Valegeas, who for a few unique days takes over the kitchens of the restaurants of the Mandarin Oriental hotels in Madrid, Miami, and Paris. With his unique approach, he invites food lovers to enjoy flavors of modern Greek cuisine, as they are redefined through his creative eye.

A unique taste of Greece
The “Oliviera Unveiled” series of events brings authentic Greek cuisine to some of the most iconic Mandarin Oriental hotels worldwide. The journey begins at the Palm Court restaurant at Mandarin Oriental Ritz, Madrid in Madrid, from January 29 to February 2, 2025. The experience continues at MO Bar + Lounge at Mandarin Oriental, Miami in Miami from February 15 to 22, 2025, and concludes at Camelia Restaurant at Mandarin Oriental, Paris in Paris from March 19 to 22, 2025.
Drawing inspiration from the unique atmosphere of each hotel, Bertrand Valegeas has created carefully curated menus that include ? la carte options as well as three-course tasting menus that will transport guests to Oliviera Restaurant, a gastronomic destination that redefines Greek cuisine. With an emphasis on the freshness and quality of exquisite Greek ingredients, each dish is a tribute to tradition, rendered through a modern and sophisticated approach.
Each event will offer guests the opportunity to discover the heart of Greek gastronomy through menus that highlight the philosophy and essence of Oliviera. Among the standout offerings are the “paramana” concept, which features traditional Greek appetizers, as well as a series of dishes inspired by Mediterranean cuisine:
