A chance encounter on the roads of mountainous Arcadia was destined to reveal a whole world to us. On the way to Elliniko, the image of a man collecting branches to smoke his hives was the occasion for a fascinating journey into the world of beekeeping.
On the unknown paths of Arcadia
Following the producer Giorgos Biris on inaccessible paths, which only those in the know of the area would dare to cross, we reached our destination. The route led us past livestock units and through narrow passages, with the vastness of the Megalopolis plain as a backdrop.

From agricultural tradition to beekeeping
“Agricultural life is in my DNA,” confesses the producer, who combines olive growing with beekeeping. The smoking technique proves to be crucial for approaching the insects. “The atmosphere of smoke tames their behavior,” explains the experienced beekeeper.
The queen and the hierarchy of the hive
A tour of the inner world of the hive reveals a highly organized society. At the center is the monarch of the swarm, which feeds exclusively on royal jelly. Her only trip outside the hive concerns the perpetuation of the species – a fertilization flight that will determine the survival of the colony.
The tireless workers of honey
The role of the workers reveals a strict hierarchy of duties. The first twenty days are dedicated to the inner workings of the hive, while they then take on the mission of collecting nectar, pollen, and propolis. Each bee has its own role in the production process, contributing to the survival and prosperity of the community.

Nomadic beekeeping: Following the flowering
The production process requires constant movement of the hives, following the flowering calendar. From the Peloponnese to Evia, Giorgos Biris moves his hives to where nature offers the best conditions for honey production. This nomadic approach ensures the quality and uniqueness of each production.
The passion behind the Golden Nectar
The producer’s dedication to the art of beekeeping is reflected in the quality of the final product. The honey production process proves to be a delicate balance between tradition, scientific knowledge, and love for nature. Each jar of honey tells its own story, a story of dedication, patience, and respect for the environment.
