The beloved Kolonaki bistro celebrates its first decade with an “Eight Hands Menu” on December 2nd with Nikos Thomas and Grigoris Kikis, Michalis Hasikos and Nikos Politikos and a big open party on December 9th, with cocktails by Vasilis Kyritsis, Vasilis Bakos and Nikos Ginargyros
December 2025 finds Simul blowing out ten candles. Ten years full of flavors, creation and people. In an Athens that is constantly filled with new arrivals – many of which “don’t make it” even for a second season – Simul has remained a solid point of reference since 2015, justifying those who loved it from the very beginning.

Its name, borrowed from the Latin simul meaning “together,” was never just a nice word on the sign. From day one, chef Nikos Thomas and co-owner Alexandra Gasparinatou envisioned a place where cuisine, wine, and people come together at a common table. The story began on a quiet alley in Kolonaki, in a listed 1930s apartment building, with Simul’s small courtyard quickly becoming a secret hangout – winter and summer.
During this decade, there were difficulties, changes, and uncertainties. But Simul learned to grow through change. In 2022, a substantial renovation opened the kitchen to the dining room, added a chef’s table, new lighting, a modern sound system, and details befitting a modern city bistrot. Behind the aesthetics, however, what seals its identity is the cuisine: dishes based on seasonal raw materials from small producers that the chef himself identifies, composing a dialogue between Greek tradition and modern flavors.

None of this would have made sense without the people who have stood by Simul all these years. The team, the friends and associates, but above all the public who supported it in every phase of its existence, even in the most uncertain moments. For all of them, Simul’s 10 years are celebrated with two milestone evenings:
- –Tuesday, December 2: chef Nikos Thomas welcomes his friends and associates Grigoris Kikis (Herve), Michalis Hasikos (Hasika) and Nikos Politikos (Kinjo) to the Simul kitchen for an “Eight Hands Menu ? la Carte”. An evening where four chefs sign dishes with shared inspiration and imagination, while the wines of the company “Aeolos” complete the experience.
- –Tuesday, December 9: the celebration opens for everyone with a big party. “Dynamiki” is in charge of the drinks of the evening, “Hanky ??Panky” serves delicious burgers, while from 19:00 onwards Vasilis Kyritsis (Line Athens), Vasilis Bakos (Tribeca, Thessaloniki) and Nikos Ginargyros (Porto Vecchio, Paxos) join forces behind the bar, creating cocktails that stand out. The music is provided by Myronas Stratis, keeping the rhythm and the spirits high.

Ten years later, Simul remains true to the spirit of “together”: whatever it has achieved, it has achieved together with its team, together with its friends and partners, together with everyone who made every night at Simul special.
