A new culinary experience begins at Costa Navarino, as Michelin-starred restaurant CTC Urban Gastronomy and chef Alexandros Tsiotinis take over three major dining venues at Navarino Dunes.
The new restaurant Par?frasi by CTC will be the core of this new culinary proposition, offering a unique fine comfort food experience. Here, traditional recipes are given a new lease of life as they are “paraphrased” through the chef’s creative eye, using exceptional local produce sourced from small producers. The inspired dishes highlight the culinary heritage of the region and of Greece in general.
Chef Alexandros Tsiotinis says: “CTC’s philosophy stems from our absolute respect for quality ingredients, as we firmly believe that everything starts with the raw material. My passion for gastronomy has always been expressed through a deep understanding of Greek traditions and this is precisely what is transmuted at the Par?frasi by CTC restaurant: we give our own interpretation to the authentic essence of Greek cuisine, highlighting its timelessness in a modern, creative way.”
At the same time, “Souvlakerie” remains true to its commitment to the best souvlaki, with excellent quality ingredients and authentic flavors, in classic and modern adaptations. At “Kafenio”, the heritage of the traditional Greek kafeneio is combined with a modern approach, offering a renewed space for coffee and appetizers.
In full harmony with Costa Navarino’s sustainability principles, the dining venues adopt sustainable gastronomy practices, such as the “nose-to-tail” philosophy to minimize waste of raw materials and the use of local, seasonal products, while strengthening the local economy.
The new menus of the restaurants at Navarino Dunes, home to The Romanos, a Luxury Collection Resort, and The Westin Resort Costa Navarino, will be presented in the spring, inviting guests to a renewed gastronomic experience for this year.

Chef Alexandros Tsiotinis is a visionary of gastronomy. His passion for cooking was rekindled in his youth. Then, through his education, in world-class schools in France and working alongside great teachers, whose restaurants are awarded 3 Michelin stars, this passion turned into love. His first business venture was carried out in 2015, creating the restaurant CTC Urban Gastronomy.
From the beginning of CTC Urban Gastronomy, the public embraced Chef Tsiotini’s gastronomic approach and the distinctions were not long in coming, culminating in the award of a Michelin star in 2021, which he still holds to this day. The goal of CTC Urban Gastronomy and Alexandros Tsiotini is to accompany their guests on a special gastronomic journey in Greece and their ongoing commitment is respect for the principles of sustainability.
